CAJUN SPICED FLATHEAD WITH TOMATO, AVOCADO AND RED ONION


To Serve 4

Ingredients:

  • 8 flathead fillets, skinned optional
  • 2 tbs olive oil
  • 2 tbs dried Cajun spice mix ( eg: Masterfoods)
Salad
  • 2 tomatoes, chopped
  • 1 red onion, peeled & cut into pieces
  • 1 avocado, peeled & cut into pieces
  • 1/2 lemon, juiced
  • 2 tbs extra virgin olive oil
  • Sea salt

Method:

  • Place the flathead fillets onto a plate and rub with the oil, then sprinkle both sides with the Cajun spices.
  • Make up the salad by combining the tomato, onion and avocado together in a bowl drizzle over the lemon juice and olive oil, season with salt and stir gently to combine.
  • Place the flathead on the preheated BBQ and cook on over a medium-high heat for approx. 1-2 minutes per side depending on the size of the fillets. Ideally only turning once. Alternatively pan fry the fillets 1-2 minutes per side.

To serve:

  • Serve fillets, lightly season with salt and serve with salad.

Alternatives: tailor, bream, snapper, barramundi, jewfish
